I've read about this nickle allergy problem several times in the last few months (on various message boards including the 2/2/02 - 3/15/02 archieve here).
I have not tried this myself but you can buy an inexpensive set of plastic "Turbo Cover" and give those a try. Also I think that Lee Oscar makes his covers out of stainless steel and there is another concern that does beautiful custom hardwood covers. Check some of those out
