When an instrument is called a "Bb instrument", it means that when you play a C on your sax, the piano player is playing a Bb. It has nothing to do with the key of the song you're playing. You can play in all twelve keys on the sax, just as you can on the piano. Unfortunately, you can't do this on a diatonic harmonica. You have to pick the right harmonica based on the key of the song (not of the sax).
