I'd, personally say, that alot of harps sound best straight out of the box, and if you're playing gigs, chances are that you are playing one that is such. However, Lee Oskars, due to their tight-air structure, I would definately reccommend playing a few songs on it first or doing some light bending on it before taking onto the field.
But as for Special 20s and the like, if you just run down the scale once or twice and make sure they work right, I love how they sound straight out of the box.
Chalk it up to experience and preference, I suppose. And to be playing gigs, you must have been playing for at least 2 years or so I would guess, and you should have plenty of both.
